It’s peach time, but only for a short while. If you think of peaches (and nectarines, and other stone fruits) as only for cobblers or cottage cheese toppers, try marinating cut fruit in an acidic dressing with some crumbled cheese and nuts for a bit and then tossing with fresh greens. Peaches also make a great salsa for grilled fish, which would be a step up from this simple dinner suggestion.

Love to Cook: If spinach salad is too pedestrian for your taste, then wilted spinach would be a good alternative. Pair it with the grilled Caribbean-spiced Red Snapper with Peach Salsa and some grilled bread.

Weeknight Reality: A big salad is always an easy, healthy dinner. This version of Mixed Greens with Peaches, Goat Cheese & Walnuts features Brianna’s Poppyseed dressing, but you could easily substitute to taste (or make your own).

Need a Miracle: Everything except the fresh peaches should be available at your grocery salad bar for a quick grab-and-go. But the fresh peaches would make a big difference and don’t take that long to cut into pieces, so don’t skip them unless you can’t find them.
